Paso Robles’ downtown is expanding its culinary and hospitality scene with new additions and reimagined spaces. Michelin-starred chef Charlie Palmer is transforming the Culinary Suite at the Paso Robles Inn, introducing three new restaurant concepts and upgrades at The Piccolo. The Inn will convert its Cattlemen’s Lounge into a Western-inspired bar and lounge, reinvent its steakhouse as The Pass, a modern tavern, and reimagine its rooftop bar as a lively happy hour destination with a rooftop garden and live music. New openings like Gravesend Wine Merchant & Eatery and Paso Bottle Shop further enhance the region’s walkable, boutique wine and dining experiences, showcasing Paso Robles’ evolving culinary identity.
